Spinach Dip

Spinach Dip 
Ingredients List: 

1 envelope vegetable recipe Lipton soup or ranch salad dressing
1 pkg Spinach thawed and squeezed dried
1 pint Sour Cream
1/2 c mayo

Mix and serve with Corn Chips

Kris's Favorite Mozzarella Dip

Mozzarella Dip

1c Shredded Mozzarella (or more)
8oz Sour Cream
1 pint Mayo
1tsp Sugar
1 tsp Onion Flakes
1 tsp accent

Mix and serve with crackers

Delicious Easy Parmesan Knots

Ingredients List: 
1/2 c Vegetable Oil
1/4 c Grated Parmesan Cheese
1 tsp garlic Powder
1 1/2 tsp. Parsley
1 1/2 tsp Dried Oegano
Dash of Pepper
2 Can (12oz) refrigerated Buttermilk biscuits

Mix all items but the biscuits
Cut each biscuit in half- roll each portion into a 6" rope and tie ina lose knot.
Place on a greased baking sheet.
Bake at 450 for 6-8 minutes
Brush the mixture over the knots

Kamper Family Christmas Dish: "Pinwheels and Pasta" - Cartwheels with sausage, cream and tomato

Ingredients List: 1lbs mild pork sausage
Salt
Pepper
2tsp Extra Virgin Olive Oil
1 Large Can Italian Peeled tomatoes, cute course with their juice
1 lb. Cartwheel Pasta
1 c. Heavy Cream
Freshly Grated Parmesean

 Slice sausage into 1/4" thick disks

Saute garlic in olive oli over medium heat- when pale gold in color add slices of sausages. 

When sausage is nicely browned, on both sides, add tomatoes and cook at a gentle simmer for about 20 minutes (fat separates and floats free and juice is reduced by 1/3) 

Add the cream and turn up heat. Cook for several minutes until cream is reduced. Add salt and liberal grinding of pepper. Turn off heat and stir in the chopped parsley

Cook pasta until barely tender

Ladel the sauce and sausages over pasta and serve with freshly graded cheese. 

Aunt Lisa's Summer Salsa/Pico de Gallo yum.

Ingredients/Shopping List: 8-10 Roma tomatoes, 1 medium onion, 1 Green pepper, other peppers optional, one lime, 1-2 cloves garlic chopped, .5-1 jalapeno, olive oil, optional: jalapeno jelly (gives some sweetness), Fresh Cilantro, Salt, Pepper Vindala Chop Wizard (also found at bed bath and beyond)


6-10 Roma Tomatoes
1 medium onion
1 Green Pepper
** Other Pepper** (optional)

Chop in the chopper  and dump in a bowl.

.5-1 Jalapeno de-seeded (depends on how spicy you like it)
2 Cloves Garlic

Mince the Garlic and Jalapeno

Add all items to the bowl.

2 tbsp Lime Juice (1/2 like worth of juice)
2 tbsp Olive Oil
1 tbsp
Pinch of Salt
Pinch of Pepper
1/3 cup lightly packed cilantro

Add these following items to the salsa and toss.

Kris' modification:
Blend lime juice, pepper jelly, garlic, jalapeno and cilantro in a small blender to make a paste/dressing to toss the salsa in.

Mom's Famous Fruit Pizza (Not Cookie Crust)

This is probably one of my favorite summertime desserts that my mom makes. A combination of fruit, cake and cheesecake. Delicious!!! You do not what your crust brown.... just golden (but cooked of course).  Make sure your pan has an edge.... or your oven could get messy.

Ingredients/shopping List: 1 box yellow cake mix, 1 stick butter, 2 eggs, 1 c Sugar, 1 8oz pkg cream cheese, 4oz crushed pineapple, fruit (Kiwi makes a nice pop of unique color), corn starch, water, vanilla

My fourth of July Patriotic Fruit Pizza... a littel brown around the edges cause my lip didn't hold in the cream cheese "sauce" and it spilled over.... still delicious though.

Preheat Oven 335
Crust:
1 box yellow cake mix
1 stick butter

Mix and press into pizza pan or cookie sheet with edges

"Sauce"
 8oz cream cheese
1 tsp vanilla
1 egg
1/2 c sugar

Beat ingredients until smooth. Place cream cheese mix on crust to bake. Bake for 15 minutes.

Toppings:
Assorted colorful fruit (apples, oranges, strawberries, kiwi, blueberries etc)
Lemon 
l/2 8oz can of crushed pineapples
1tbs corn startch
1/2 c sugar
1/2 c water

Place assorted fruit on the baked cheese mixture. squeeze lemon over the fruit

Boil pineapple, corn starch, sugar and water till mixture becomes clear. *Optional add yellow food coloring
Pour/spoon over fruit

Carrot Cake with Cream Cheese Icing

"A simple, moist, yummy carrot cake with cream cheese frosting."
Ingredients:
4 eggs
1 1/4 cups vegetable oil
2 cups white sugar
2 teaspoons vanilla extract
2 cups all-purpose flour
2 teaspoons baking soda
2 teaspoons baking powder
1/2 teaspoon salt
2 teaspoons ground cinnamon
3 cups grated carrots
1 cup chopped pecans
1/2 cup butter, softened
8 ounces cream cheese, softened
4 cups confectioners' sugar
1 teaspoon vanilla extract
1 cup chopped pecans
Directions:
1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan.
2. In a large bowl, beat together eggs, oil, white sugar and 2 teaspoons vanilla. Mix in flour, baking soda, baking powder, salt and cinnamon. Stir in carrots. Fold in pecans. Pour into prepared pan.
3. Bake in the preheated oven for 40 to 50 minutes, or until a toothpick inserted into the center of the cake comes out clean. Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely.
4. To Make Frosting: In a medium bowl, combine butter, cream cheese, confectioners' sugar and 1 teaspoon vanilla. Beat until the mixture is smooth and creamy. Stir in chopped pecans. Frost the cooled cake.
